We're looking forward to seeing everyone on March 29.Kauai Matzah HuntFinding matzah on Kauai, and in all of Hawaii, can be a challenge. This year however, we have some good news.1. In Kapaa, Safeway has many cases found in the store room by the vendor and it is dated for this year. They have plenty of macaroons and juice too. Foodland will be getting Passover products but not plain matzah (they are trying to get some for next year). In Lihue, Times market is already sold out of plain matzah but does have other Passover items.2. We hope to have matzah for sale at our community Seder.Homemade MatzahIf you'd rather make your own maztos than rely on the difficult to find and less tasty commercial variety, here's Jeff Tucker's recipe. It will later be found in our Kitchen Corner.Makes 8-12, depending on preferred size
- 2 1/2 cups flour (white and/or wheat)
- 1 cup water
- 1 teaspoon salt
Pre-heat the oven to 475°. Line two cookie sheets with parchment paper.
- Mix together flour and water. Knead briefly into a smooth ball (several minutes). Add small amount of flour if dough is sticky.
- Cut the dough into equal pieces. Roll out the dough as thin as possible, then move to cookie sheet and poke all over with fork to prevent air pockets. The thiner you roll it, the crisper it will be.
- Bake until golden and crisp, about 3-5 minutes.
Kashrut: If you don't keep kosher, this is a lot easier. Kosher law requires that the matzohs be done baking with 18 minutes of mixing the flour and water. Finding Passover flour (kemach shel matzah shamura) is another trick.
